Ingredients:

1 cup organic split yellow moong dal (yellow mung beans) 

1 cup Misri Farm’s A2 Gir Cow Ghee 

1 cup organic sugar or jaggery 

4 cups water 

1/2 teaspoon cardamom powder (Elaichi Powder)

A handful of chopped nuts (almonds, cashews, pistachios) for garnish

Step 1: Rinse and Soak the Moong Dal 

Rinse 1 cup of organic split yellow moong dal under running water until the water runs clear. 

Soak the rinsed moong dal in enough water for at least 4 hours or overnight.

Step 2: Drain and Grind the Moong Dal 

After soaking, drain the water from the moong dal. 

Transfer the soaked moong dal to a blender or food processor.

Grind the moong dal into a rough paste without adding any water. Set aside.

Step 3: Cook the Moong Dal Paste 

Heat 1/2 cup of Misri Farm’s A2 Gir Cow Ghee in a heavy-bottomed pan or kadai over medium heat. 

Add the ground moong dal paste to the heated ghee. 

Stir continuously and cook the moong dal paste until it turns golden brown and releases a nutty aroma. This may take about 15-20 minutes.

Step 4: Prepare the Sugar Syrup 

While the moong dal is cooking, in another pan, bring 1 cup of organic sugar or jaggery and 4 cups of water to a boil. 

Stir until the sugar or jaggery completely dissolves.

Step 5: Combine the Moong Dal Paste and Sugar Syrup 

Once the moong dal paste is cooked and turns golden brown, carefully pour to prepare sugar syrup. 

Stir well to combine and cook the mixture over medium-low heat until it thickens and reaches a halwa-like consistency. This may take another 15-20 minutes.

Step 6: Add Flavorings 

Once the halwa thickens, add 1/2 teaspoon of cardamom powder and mix well.

Step 7: Garnish and Serve 

In a separate pan, heat the remaining 1/2 cup of A2 Gir Cow Ghee and fry the chopped nuts until golden brown. 

Pour the fried nuts along with the ghee over the prepared moong dal halwa. 

Mix well and remove from heat. 

Serve the hot and delicious Organic Moong Dal Halwa garnished with more chopped nuts. Enjoy!
